Ham and Turkey Soup
I hope you had a wonderful Christmas! I thought our turkey was especially good this year. Of course it could have been that I was incredibly hungry by the time we sat down to eat it! As great as it was the first time around, there are only so many ways to eat the leftovers. I found another solution this year, and it’s so creamy and delicious!
Ham and Turkey Soup
1/4 c. butter
2 c. diced ham
1 onion, chopped
2 carrots, peeled and sliced
2-3 potatoes, diced small!
14 oz. can chicken broth
2 (10 oz.) cans cream of chicken soup
1 soup can of milk
2 c. cooked turkey, diced
salt & pepper to taste
1/2 pint half n half
In large soup pot, saute ham, onion, and carrots in butter until onions are translucent. Add chicken broth, cream of chicken soup, milk and potatoes; simmer over medium heat until potatoes are cooked. Stir in turkey, salt & pepper. Add half n half and gently heat through.
*We added a can of corn and a bit of leftover broccoli as well. You can also saute a couple ribs of chopped celery with the ham, onion & carrots. A 16 oz. can of diced tomatoes is also an option. It’s a very versatile recipe!
